This week I was frustrated because the only organic broccoli they had was full heads with enormous stalks on them. I hate paying for stalk on produce when I know they'll end up thrown out. I've seen people break them off at the store but I think that is rude. We eat a lot of broccoli and were out so I needed to get it...fast forward to last night. I'm making supper and cutting up some broccoli to steam. I, as expected, cut off the stalks and break up the crown. I realized that I had probably paid for more stalk then crown. Urrrgghh!
So I carried on with supper, slightly steaming mad over it... Then I had an idea. I'm counting calories right now and was really short on what I should be eating for the day so I was trying to think of something else to eat. I settled on...broccoli stalk soup!
I took the stalks and trimmed off the ugly and tough bits and then cut it into slivers. I put it in a pot with about 5 thinly sliced baby carrots and a couple cups of chicken stock and let it simmer until the veggies were soft. Then I took the potato masher and smooshed the veggies added some pepper and a quarter cup of milk. I thickened it with cornstarch. It was delicious!!!!

I preferred this over regular broccoli soup made with broccoli heads, it was very mild flavoured.
So a frustrating situation resulted in a yummy new recipe...I may be TRYING to buy broccoli stalks from now on!
