
I made one of my favourite quickie meals - Spaghetti Carbonara. I can't remember where I got this recipe version of this classic pasta but it is one of our family faves. I usually have all the ingredients on hand.
Here's the recipe if you are so inclined!
Spaghetti Carbonara
4 serving
1/2 cup of crisp bacon bits
8 eggs
Cooked spaghetti for 4
1/2 cup grated fresh Parmesan cheese
Salt and pepper to taste
1/2 a bunch of Asparagus spears (optional)
Cook spaghetti and put in bowls. Sprinkle most of the bacon bits and parm cheese on top. Add asparagus spears. Fry eggs, leaving yolk runny; put eggs on top of pasta and sprinkle with remaining bacon bits and parm cheese. Add salt and pepper to taste. Break egg yolk and let it run though pasta.
It's simple and tasty! Here's what ours looked like! I didn't end up using the asparagus as it didn't look to great... It was good anyhow! Ethan cleared his whole bowl and asked for seconds!
