~Menu Plans~

Well Randy is back next weekend, woohoo!, so I am getting back to menu planning.  Now that there is someone to really cook for it is a huge help.  Ethan & I can get by without one but with Randy home they keep my sanity!

So this is what we’ll be eating for the next two weeks in case you’re thinking of dropping in for dinner, LOL!

Week Ending Jan 30:

Sun Jan 24 –  Us:  Teriyaki Chicken Breast, Chicken Fried Rice, Peas  Ethan:  Supper at Auntie Mary’s house

Mon Jan 25 – Us:  Korma Chicken, Rice, Broccoli; Ethan:  Korma Lentils, Rice, Pureed Broccoli

Tues Jan 26 – Us:  Taco Salad with refried Beans; Ethan:  Sweet Potato, Refried bean taco

Wed Jan 27 – Us:  Taco Casserole; Etahn:  Sweet Potato, Pureed Beans

Thurs Jan 28 – US:  Shrimp Pasta with Pesto Cream Sauce, Steamed Broccoli; Ethan:  Pasta, Broccoli, Pureed Beans

Fri Jan 29 – US:  Pizza (Costco has an awesome flat crust one we like so it isn’t take out!!!), Salad; Ethan:  Pizza, Oatmeal

Sat Jan 30 – Us:  Roast Beef, Mashed Potatoes, Gravy, Corn, Yorkshire pudding;  Ethan:  same as us

Week Ending Feb 6

Sun Jan 31 – Us:  BBQ Beef on a Bun, Coleslaw, Steak Fries;  Ethan:  Mashed potatoes with tofu, gravy, corn,

Mon Feb 1 – Us:   Jerk Chicken Drumsticks, Rice, Coleslaw;  Ethan:  Rice, Sweet Potatoes with Tofu, toast

Tues Feb 2 – Us:  Jamie’s Minestrone (allrecipes.com), Crusty buns; Ethan:  same as us except buns

Wed Feb 3 – Us:  Burger Night!!! Bacon Cheeseburgers, Corn, Sweet Potato Fries; Ethan:  Corn with canned lentils, sweet potato fries

Thurs Feb 4 – Us:  Chicken Tikka Masala, Rice, Broccoli;  Ethan:  Rice, Broccoli, lentils with sauce

Fri Feb 5 – Us:  Fish & Chips, Peas;  Ethan:  same as us

Sat Feb 6 – Us:  Chicken Pot Pie, Salad; Ethan:  chicken pot pie

Our menu plan is pretty easy:  Wednesday Nights when Randy is home is Burger night so it varies on type but not what it is.  I am trying to go meatless one night a week and have fish once a week.  Lots of veggies and variety so we don’t get bored too!  The best part is that I know that all I need for these two weeks meal plans is:  Broccoli, Buns, Veggies for Minestone soup, coleslaw mix,  salad mix, soft tortillas and tofu.  A quick and easy and cheap shopping trip on Sunday nights to prepare for the following weeks menu!  It makes me so happy to have a plan!!!
